The Notepad window is displayed or hidden by selecting View>Notepad, command-L, or the toolbar button. It is a quick way for you to jot down something that you may want to find easily later, such as a phone number, an idea or reminder.
There is no need to save the information on the notepad, it is saved automatically when Organise is closed.
